Veggie Pot Pies

This recipe will yield 6-8 pies. I used disposable aluminum pans. These work perfect Disposable Aluminum 5 3/4 Extra Deep Meat/Pot Pie Pan #2400 by Durable Packaging (100). You can also do casserole style in a large baking dish.

  • 1 stick of vegan butter (plus 3 tablespoons for brushing tops)

  • 1/2 cup flour (regular or gluten-free)

  • 1 onion, diced

  • 3 celery stalks, diced

  • 4 carrots, peeled and diced

  • 3 cups vegetable broth

  • 3 potatoes, peeled and small diced

  • 2 bay leaves

  • 1 cup frozen peas

  • 1 cup cut green beans (fresh or frozen)

  • 1-2 cups broccoli florets

  • 1/2 cup almond milk

  • *Optional: fresh herbs—rosemary, thyme, parsley

  • 1 tablespoon poultry seasoning (yes, it’s vegan despite the name)

  • Salt and pepper to taste

  • 1 recipe for pie crust or store bought pie crust (in the freezer aisle). There are vegan ones.

Preheat oven to 350F

Make a blonde roux (no color, just enough to incorporate butter and flour). Melt butter in a large Dutch oven or pot. Add flour, cook for 3-4 minutes by constantly moving with a wooden spoon or spatula. Add onions, celery, and carrot. Cook within the roux until softened. Use a whisk and slowly add vegetable broth. Once roux and liquid come together and is smooth, add bay leaf, and potatoes. Cook for 5 minutes until potatoes are slightly softened. Now add remaining vegetables, spices, and herbs. Allow mixture to come to a complete boil—stir constantly to thicken the mixture; it should be a smooth gravy-like consistency with chunky veggies. Stir in almond milk. Check seasoning and turn off the heat. Once slightly cooled, place in aluminum pans or baking dish.

Prepare dough. Roll out pie dough and use the circle part of your aluminum pan and cut into circles. Place each circle on top of prepared pans. Take a fork and press along the edges to seal the dough to the pans. Brush tops with melted butter. Place all pies on a sheet pan. Place in oven until golden, about 20-25 minutes.

Remove and LET COOL for 10-15 minutes before serving. These things are awesome but are deadly hot!
