Soy Curl Tacos

Soy Curls are essential to every vegan kitchen! These are one of my favorite single-ingredient meat alternatives. Unlike other "chicken" alternatives, these don't need to be fried, which makes them even healthier!

Rich in fiber and protein, soy curls are made of non-GMO soybeans that are processed without chemicals and packaged without additives or preservatives... they look, feel, AND taste like chicken!

They come dehydrated, and they kind of look like mushroom stems. Give them a quick soak in boiling water (pro tip: soak them in vegan broth for extra flavor!) to rehydrate. Once they're plump, you can add in whatever spices your heart desires or give them a quick sauté in a pan with olive oil and seasonings.

I wanted to create a bare minimal recipe for those that are intimidated with tons of ingredients or may need something quick and fast to get you through a meal. Soaking these soy curl only takes 10 minutes! The amount of flavors that can be added are endless— tacos are just the beginning.

Ingredients:
1- 8 pounce package of Soy Curls

1- Taco Seasoning packet (or homemade to taste)

2 teaspoons salt

1/2 teaspoon pepper

1 teaspoon smoked paprika

1- 14.5 ounce can of diced tomatoes (untrained)

Optional- 1 onion diced and sautéed before adding soy curls

Tortillas (any variety)

Optional garnishes: lettuce, tomato, avocado/guacamole, plant-based cheese, jalapeños, salsa, plant-based sour cream.

Instructions:

Soak soy curls in boiling hot water for 10 minutes. Drain. Press out as much water as possible. Set aside.

Heat a large large. Optional sauté 1 diced onion in 1 tablespoon of neutral oil. Once onions are translucent add soy curls and sauté for 4 to 6 minutes to slightly brown.

Add seasonings, salt and pepper. Mix.

Add diced tomatoes with its juice.

Simmer for 3 to 5 minutes to allow the flavors to open up.

Adjust seasoning if needed.

Serve with warm tortillas and optional garnishes.
