APPLE CRANBERRY HOLIDAY STUFFING
Ingredients
2 Tablespoons Avocado oil
1 onion, chopped
2 sticks celery, chopped
2 cups butternut or any squash, cubed 3 cloves garlic, minced
1 Tablespoon poultry seasoning
1 Tablespoon chopped fresh rosemary
1 Tablespoon chopped fresh tarragon
2 Bags store bought stuffing mix
4 cups vegetable broth
1 cup dried cranberries
3 Granny smith apples, peeled and cubed Salt and Pepper to taste
Instructions
Preheat the oven to 375 degrees.
In a saute pan, heat oil over medium heat, add onion, celery, squash, and garlic. Sweat
vegetables until soft, 10-15 minutes. Add seasoning and fresh herbs and set aside.
Add broth to a sauce pot, bring to a boil, then take off the heat, set aside.
In a large bowl, add stuffing mix, hot broth, cranberries, apples, and vegetables. Mix with
a large spoon until all ingredients are combined evenly. Taste and adjust for seasoning.
Transfer to a 9X9 casserole dish, bake for 20 minutes or until the top looks golden and
crispy.
